Duck, especially the free-range duck we raise here on our family farm, is a great alternative if you are looking for something completely different, yet just as versatile and nutritious.

How to Cook Duck
You can roast, deep fry or grill a whole duck, which are all traditional Easter dinner preparations.

Make a tasty pizza with duck as the main topping and others such as squash, spinach and red onions to finish it off. Cook the duck breasts in a skillet with chicken broth and butter for a hearty, warm meal. Whip up duck tacos or enchiladas with mole sauce, black beans, lettuce, corn and cheese for a culturally-inspired feast.
A quick note: Duck meat is fatty. If you want to get rid of some of that heaviness, trim the bird down to just the meat. Also, avoid adding oil when you are cooking.
